

In collaboration with Bunnahabhain Distillery, I invite you to gather on Islay for an evening shaped by land, sea, and season.
I have crafted a four-course menu that draws on the natural pantry of Islay. Every ingredient is guided by the landscape and brought to life over open fire. Each course is thoughtfully paired with whiskies from this year’s Westering Home collection.
You will also enjoy an exceptional distillery-exclusive single malt celebrating the 40th anniversary of Fèis Ìle, alongside two rare warehouse drams selected by Distillery Manager Andrew Brown and Visitor Centre Guide David Brodie.
Set against the backdrop of the Sound of Islay, with music and conversation flowing throughout, this is more than a dinner. It is a shared experience and a coming together of flavour, craft, and community.
This is a true first for Bunnahabhain. It is an evening to savour, to connect, and to carry with you.

Outdoor cooking, reimagined - brought back to its simplest, most natural form, where ingredients meet the embers.
For me, The Wilder Kitchen is more than a way of cooking. It is about eating well, slowing down, and making a deep connection with nature.
I am bringing this live-fire philosophy to The Dell of Abernethy, a secluded woodland hideaway nestled on the edge of the ancient Abernethy Forest. This stunning venue features a collection of charming cottages and a Scandinavian Tipi hidden beneath the pines, making it the ultimate destination for wild fine dining.
With Nethy Bridge village only 20 minutes away via riverside walk, forest wander, or scenic amble, The Dell is the perfect base for exploring the Cairngorms National Park and beyond.

Building upon the foundational concept of celebrating local produce and culinary talent, Wild Feasts at Oxmoor Farm is more than just a series of dining events—it’s a burgeoning movement set in the heart of Buckinghamshire. This rural supper club series transforms the bucolic landscapes of the farm into a vibrant stage for chefs to showcase their skills, all while paying homage to the rich bounty of the surrounding area.
I am absolutely thrilled to be joining this incredible movement. I am really looking forward to working with the team at Oxmoor Farm to bring my signature live-fire philosophy to their beautiful location. For my guest residency, I will be cooking over open fire to prepare a rustic, nature-driven menu that highlights the very best seasonal ingredients from the region.
The entire initiative is a testament to a shared dedication to not only elevating the dining experience but also supporting local producers, farmers, and wineries. By sourcing ingredients exclusively from the region, these Wild Feasts promote a sustainable ecosystem that benefits the local economy and ensures the freshest, most flavourful dishes make it to the table.
